Scapa is the lesser known of the two distilleries remaining on Orkney. The distillery was built in 1885, came under the ownership of Hiram Walker in 1954 and has since become part of Allied Distillers. In 1959 two new stills were added to the distillery with the wash stills being of the Lomond style. During World War II the distillery was almost destroyed by fire, but it was saved with the help of the Navy who were posted nearby, and two of the warehouses today are original buildings. It was mothballed in 1994, and from 1997 operated on a part-time basis using the staff from Highland Park. In March 2004 it was announced that Allied were investing in this dramatic cliff-top distillery, to be operational on a full time basis in 2005. Great news!
House style: Oily in body, with chocolate, salt and straw in the flavour. A generally mild and easy-drinking whisky, but one that is highly rated.
Undiluted
Nose: Floral with dry grass and leafy aromas. Hints of citrus fruits and a spicy, cedar wood edge.
Palate: Dry and peppery. Cedar and pine wood flavours with a delicate fruitiness developing.
Diluted
Nose: Sweet notes - caramel and vanilla evident. Some lavender and pot pourri aromas. The cedar element remains.
Palate: Dry with bracken and gorse flavours. Some cracked black pepper notes and a touch of charred oak.
